Who says that you can’t have healthy and tasty at the same time? My wife and I had an amazing dinner last night courtesy of SunBasket. This one was an instant classic: White bean tostadas with blackberry salsa and pumpkin seed dukkah.
The tostada part alone “had me at hello,” but it was the other components that elevate the tastiness & healthiness factors to another level. White beans are always nutrient-dense, high in fiber and add a protein power punch. Avocados are incredibly nutritious and are cholesterol-free, extremely low in sodium, high in vitamin C & potassium (the latter being linked to reduced blood pressure), and is loaded with heart-healthy monounsaturated fatty acids.
